There is no plan to replace the default ensemble for Symphony 2.1.

Piano Sonata was considered as a default ensemble for a post-2.0 version before 3.0 became a substantial rewrite. As of now, the plan is to build a new default ensemble for 3.0 that:

1. Is simple enough for beginners to use and hack
2. Demonstrates that Symphony is capable of more than blogging
3. Incorporates documentation more thoroughly so that beginners can learn Symphony in context as they explore the default ensemble

We’re keen to have community involvement in this, but things are not really at that stage yet. We’ll keep you all posted.
